I don't know anything about baseball cards but saw topped opening day for 40 a box thinking it's like victory for hockey so what would the staple baseball brands be?
 
Topps , topps bowman bowman and more topps and bowman

since they are only licensed producer.

all joking aside

regular topps issue has been a staple every year since 1952

Bowman caters more to prospectors with rookies and minor leaguers but still 200 or so veterans

Mid range you got topps triple threads and bowman sterling topps tek and bowman tek

high end
topps 5 star, museum, tier 1 and other fancy names i cant remember

Allen and ginter remains my favorite for retro design and non baseball schtuff
 
To answer the title directly, closest to UD Series 1 hockey is....Topps Series One Baseball. Large base set, 1 hit per box (3 I think in jumbo boxes), followed by Series Two and then an Update Set.

It seems some of the more popular sets in baseball are Topps Chrome and Bowman Chrome.

Me personally, I don't really collect modern baseball myself, but I always end up grabbing a box or 2 of Museum Collection and Triple Threads. Higher price, but some decent returns in my experience.
 
The set that is probably closest to UD 1/2 in terms of format - it would be Topps Heritage. 400 card base set, 100 SPs at 1:3 packs - 1 hit per box plus a parallel and other inserts in the box.
