Fixing the mistake would have been noticing there was a problem with the card before you packed it out into products. What is the purpose of quality control?
If you go to a grocery store and they put the incorrect price on something, they are required to honor the lower price. If you open a card that says it's supposed to be autographed it should be autographed. If it's not you should be compensated for it. Not well the printers made a mistake. Put a redemption and fix the problem if required before you pack it out. It's called quality control for a reason and it's clear Upper Deck either has none or simply doesn't care. As someone who has pulled a card that was actually supposed to be autographed and wasn't and Upper Deck couldn't care less about it.
