Have u tried scanning a card that is not in a case/toplaoder. Sometimes the glare and that plastic surface may cause a bad scan.

Mine does the same thing. There are options to sharpen the photo, brighten it etc. before you save it. I'm not familiar with your scanner but try messing around with the
adjustments at the bottom of the screen you posted.

Jordan - Try shrinking the images down to 320 x 230. That should help with the clarity. Also, try the 'sharpen' filter if resizing didn't help. Definitely scan the card without a top loader or soft sleeve.

I have some Epson scanner too and never had any problems with scan quality and i have never touched to any of those settings.

Also toploaders/beckett holders are not a problem. Or attleast i think it scan them good too, here are examples:
